This coffee is processed at the Danche washing station in Chelbesa, Gedeo, from cherries grown by around 400 smallholders farming at elevations between 2,000 and 2,300 metres above sea level.
The farms around Danche are small, averaging between one and two hectares, and the region's elevation and fertile soils give the cherries here real depth and complexity. Nordic Approach has worked to build traceable, direct relationships with producers and washing stations across Ethiopia, and this lot is one of the coffees that has come out of that work — a dense, layered natural with a cupping score of 89.
Harvest & Post-Harvest
For this natural-processed lot, ripe cherries are hand-picked and sorted before being laid out to dry whole in the sun, developing the fruited, syrupy character naturals from this region are known for. Careful drying and regular turning on raised beds help keep the lot clean while building its sweetness.
